The Famous Pasta Salad!

This recipe is so good even my kids beg for it! Almost every potluck I attend this Pasta Salad is always requested! I have been hunted down, stalked and bribed for the recipe! Thanks to everyone and your kind words saying how delicious it is! I have decided to share the recipe! It's so easy it's kind of funny! I say you make it "your recipe" and add anything to your liking! 

Ingredients:

2 Boxes Garden Rotini Noodles
1 large package of Boneless/Skinless Chicken Breast(about 8 strips or 5 lbs)
2 Green Bell Peppers
1 Red Bell Pepper
1 Orange Bell Pepper
1 Yellow Bell Pepper
1 Red Onion(sliced)
1 can of pitted small olives(drained)
1lb of Cheddar Cheese(cubed)
1lb of Monterrey Jack Cheese(cubed)
2 packages of small Red Cherry Tomatoes(or more to add color)
Seasoning:
Salt/Pepper
Garlic Salt
Italian Seasoning
Italian or Zesty Italian Dressing

Note: This is how I make it, you can throw in broccoli, cauliflower, ham, salami, sausage, pepperoni, Pepper Jack cheese etc…Heck you can sprinkle diced Turkey Bacon on top! I have even used whole wheat Rotini noodles and Gluten free! You can also use Olive oil mixed with vinegar and lemon juice instead of Italian Dressing!

Preparation: Bring Chicken Breast to a boil until tender. Sprinkle garlic salt/salt/pepper. Once Chicken is ready let it cool and chop,cube or shred and set aside. Prepare the noodles according to the box. Once the noodles are ready I run cold water over them and set aside. The rest of the ingredients you will simply rinse, chop, dice or slice to your liking. In a large bowl or aluminum pan mix everything together; add seasoning to your taste and drizzle as much dressing as desired. Cover & refrigerate. I hope you will love how all of the ingredients makes such a gorgeous and tasty dish! 

Serving size: 25-30

Shrimp Ceviche

 I have been MIA for quite a while but I am back and much stronger than ever! I'm beyond thrilled to share a healthy recipe to kick off 2014! My healthy and fit journey began Oct 2012 and has become my lifestyle! Today with the help from my great friend Candi at EyeCandi Fitness I am educating myself on proper dieting! I literally have to close my eyes to chocolate donuts & cream puffs (my weakness) and say many prayers. Anyhow, thanks for stopping by and I hope you enjoy this recipe from Mama Luigi!

SHRIMP CEVICHE

6 12oz bags of frozen, cooked large shrimp, deveined (thawed & remove tail)
6-8 lemons freshly squeezed
4 large jalepenos diced
3 roma tomatoes diced 
1 bunch chopped cilantro
2 diced red onions
salt & pepper to taste
*optional
You can add small chunks of avocado 
4-6 freshly squeezed limes or cut for garnish 

*Place all ingredients in a large glass bowl, mix, add salt, pepper and lime to taste! Keep refrigerated & enjoy!

*Serving size: Appetizer for 8

Breakfast Series: Cereal Cupcakes


I just had to make a Cinnamon Toast Crunch Cupcake since it is my favorite cereal! This cereal bowl is a cinnamon cupcake with creamy buttercream! They are like little bowls of cereal but not! When I'm down the cereal aisle now I'm like a kid in a candy store! I have so many choices it's unbelievable. Once I complete my Breakfast Series I will share my recipes. I'm Back and I even made breakfast!

Hey everyone guess what time it is? Yep it's "Back to School" and this mommy is gonna miss her angels! With the girls being in school I can now play with sugar and share! I have so much to catch up on and many recipes to share! I hope you love the breakfast I made for you this morning! It's my Fruity Pebbles Cupcake and just one of my Breakfast Series and so fun! The buttercream taste like sweet creamy milk and goes perfect with the moist fruity pebble white cake. Taste like a bowl of cereal in a cupcake!
