Shrimp Ceviche

 I have been MIA for quite a while but I am back and much stronger than ever! I'm beyond thrilled to share a healthy recipe to kick off 2014! My healthy and fit journey began Oct 2012 and has become my lifestyle! Today with the help from my great friend Candi at EyeCandi Fitness I am educating myself on proper dieting! I literally have to close my eyes to chocolate donuts & cream puffs (my weakness) and say many prayers. Anyhow, thanks for stopping by and I hope you enjoy this recipe from Mama Luigi!

SHRIMP CEVICHE

6 12oz bags of frozen, cooked large shrimp, deveined (thawed & remove tail)
6-8 lemons freshly squeezed
4 large jalepenos diced
3 roma tomatoes diced 
1 bunch chopped cilantro
2 diced red onions
salt & pepper to taste
*optional
You can add small chunks of avocado 
4-6 freshly squeezed limes or cut for garnish 

*Place all ingredients in a large glass bowl, mix, add salt, pepper and lime to taste! Keep refrigerated & enjoy!

*Serving size: Appetizer for 8
