This recipe is so good even my kids beg for it! Almost every potluck I attend this Pasta Salad is always requested! I have been hunted down, stalked and bribed for the recipe! Thanks to everyone and your kind words saying how delicious it is! I have decided to share the recipe! It's so easy it's kind of funny! I say you make it "your recipe" and add anything to your liking!
2 Boxes Garden Rotini Noodles 1 large package of Boneless/Skinless Chicken Breast(about 8 strips or 5 lbs) 2 Green Bell Peppers 1 Red Bell Pepper 1 Orange Bell Pepper 1 Yellow Bell Pepper 1 Red Onion(sliced) 1 can of pitted small olives(drained) 1lb of Cheddar Cheese(cubed) 1lb of Monterrey Jack Cheese(cubed) 2 packages of small Red Cherry Tomatoes(or more to add color) Seasoning: Salt/Pepper Garlic Salt Italian Seasoning Italian or Zesty Italian Dressing
Note: This is how I make it, you can throw in broccoli, cauliflower, ham, salami, sausage, pepperoni, Pepper Jack cheese etc…Heck you can sprinkle diced Turkey Bacon on top! I have even used whole wheat Rotini noodles and Gluten free! You can also use Olive oil mixed with vinegar and lemon juice instead of Italian Dressing!
Preparation: Bring Chicken Breast to a boil until tender. Sprinkle garlic salt/salt/pepper. Once Chicken is ready let it cool and chop,cube or shred and set aside. Prepare the noodles according to the box. Once the noodles are ready I run cold water over them and set aside. The rest of the ingredients you will simply rinse, chop, dice or slice to your liking. In a large bowl or aluminum pan mix everything together; add seasoning to your taste and drizzle as much dressing as desired. Cover & refrigerate.
